Caribbean Coleslaw

Ingredients:

  • Coleslaw:
  • 4 cups Chopped Cabbage
  • 3/4 cup Chopped Purple Cabbage
  • 1 cup Shredded Carrots
  • 3/4 cup Diced Pineapple
  • 1 cup Thinly Sliced Mango
  • 3 tbsp Red Onion
  • Dressing:
  • 1 cup Mayonnaise
  • 1 tsp Arizona Gunslinger Caribbean Hot Sauce
  • 1 tsp Dijon Mustard
  • 3 tbsp Pineapple Juice
  • 1 tbsp Sugar
  • 1/4 tsp Celery Salt
  • 1/2 Lemon juiced

Instructions:

  1.  In a large bowl,  mix cabbages,  carrots,  pineapple,  mango,  and red onion.
  2.  In a separate bowl,  mix mayonnaise,  Caribbean Hot Sauce,  dijon mustard,  pineapple juice,  sugar,  celery salt,  and lemon until well blended.   Should form a dressing type mixture.
  3.  Pour dressing over dry ingredients and mix until all ingredients are coated.
  4.  Chill for 30 minutes to an hour (or longer if desired).
  5.  Serve and enjoy
